Key Characteristics & Culinary Features
• Appearance: The grains feature a distinct yellowish or pale golden color. This is the signature look of parboiled rice (Sella), which results from a specialized hydrothermal steaming process applied while the rice is still in its husk.
• Texture & Structure: The steaming process modifies the starch inside the grain, hardening it. This makes the grains highly robust and prevents them from breaking easily during milling or heavy cooking.
• Cooking Performance: When cooked, these long, slender grains elongate significantly without expanding in width. They possess a firm, fluffy texture and stay completely separate and non-sticky, making this variety the preferred choice for bulk catering, layered biryanis, and traditional pilafs/pulaos.
• Nutritional Content: Because the nutrients from the outer husk are forced into the center of the grain during parboiling, it retains a higher concentration of vitamins and minerals compared to standard polished white rice.
